This week’s basket included: zucchini and summer squash, cucumbers, red and green leaf lettuce, bok choi, green pepper, cilantro, scallions, and broccoli.
My plan was:
- Honey-key lime grilled chicken with grilled zucchini
- Scallion crepes with greens
- Pasta with vegetables and ricotta Beer can chicken, served with Sesame Ginger couscous with bok choi, and cucumber salad
- (Lettuce and cucumbers in salads)
Quite a significant change in plans! We did a lot of thinking on our feet this week, but that’s part of the fun of having this kind of abundance at our fingertips.
