This is one of those ridiculously healthy meals that isn’t even worth photographing, because it looks so ugly. But tasty!
1 bunch kale
1 block extra firm tofu
1 onion, diced
1/2 C peanut butter, mixed with some hot water until smooth
2 T soy sauce
Worcestershire, hot sauce, lime juice
Saute the onion until tender, and then add the washed and trimmed kale. Saute until the kale starts to wilt, then add water or stock; simmer for 15-20 minutes, until the kale is tender. Add diced tofu, then peanut butter and other sauce ingredients. Simmer a few minutes, and serve over rice.
