CSA Week Three: Summary

This week’s basket contained: two heads of lettuce (one red, one green, probably Boston lettuce), spinach, broccoli, flat-leaf parsley, fresh garlic (enormous cloves!), and summer squash.

My plan for the week, with links as appropriate:

  • Stuffed summer squash with Ricotta, mozzarella, and parmesan, pasta with tomatoes and ricotta, and salad
  • Pad see ew again (no link here, nothing changed – Greg made this, because I was working late)
  • Gingered kale and tofu Kale with peanut sauce and tofu over rice with salad
  • Blanch and freeze the spinach for later

I did not end up blanching and freezing the spinach, unfortunately, the week just ran away with me. So I ended up having to throw out a bag of spinach when we got home from the airport Sunday, which was sad. But for a crazy busy stressful week, this wasn’t bad.
